Just before serving, wash zucchini and remove ends (do not peel). Coarsely grate zucchini and squeeze out all liquid. Heat oil in large skillet over medium-high heat. Sauté zucchini, stirring for 3-5 minutes. Add nutmeg and mix thoroughly. If desired, add cream after 3 minutes and continue cooking additional two minutes until liquid is slightly reduced. 4-6 servings.
