Wheat Berry Salad
Ingredients:
- 1 cup cooked wheat berries*
- 1 dozen yellow and/or red cherry tomatoes, halved
- 1 dozen Kalamata olives, pitted and halved
- 2 ears of corn, cleaned
- Vinaigrette to lightly coat
- Fresh mozzarella (we used mozzarella "pearls" from Whole Foods)
- Fresh basil, julienned
Cut corn from cob. Combine wheat berries, cherry tomatoes, olives, and raw corn. Toss with vinaigrette, add mozzarella, and basil. Serve immediately. 4 servings.
