Veggie-Fried Rice
Ingredients:
- 2 cups cooked rice, chilled
- 1 red pepper, cut into strips
- 24 snow peas, trimmed and cut into thirds
- 12 stalks asparagus, cut on the slant into 2" pieces
- 3 carrots, thinly sliced
- 1/4 lb cauliflower cut into flowerets
- 2 eggs, beaten
- Soy sauce to taste
- Red pepper flakes to taste
- Oil for stir-frying
Heat oil (just to coat bottom of large skillet) over high heat.
Add vegetables and stir-fry quickly just until crisp-tender. Add
cooked rice and stir until well combined. With quick stirring
motion, add beaten eggs. Remove from heat and add soy sauce and red
pepper flakes to taste. 4 servings.
