Turmeric Coconut Rice (Adapted From Andrea Nguyen, Food52)

Ingredients:

Wash the rice in a fine mesh strainer until the water runs clear.

Combine rice, coconut water, turmeric and salt in a medium sauce pan. Bring to a boil, stirring occasionally and cook 2-3 minutes. Turn heat to low and cover the pan. Cook for 10 minutes.

Turn off heat and allow to sit for 10 minutes.

Uncover and add coconut oil. Fluff with fork and re-cover. Let rest for 10 minutes-30 minutes. Fluff rice again and serve.
