Toast cumin and coriander seeds until fragrant.
Mix with paprika and grind with mortar and pestle or spice grinder.
Whisk together spice mixture, lemon juice, garlic, olive oil and mayonnaise. to make the aioli. This can be made ahead and refrigerated for up to 4 hours.
Add 2 TBS of the aioli to the ground turkey and mix well. Form into patties and cook/grill. Serve with aioli.
