Chunky Squash Gratin

From The Provence Cookbook, Patricia Wells, 2004.

Ingredients:

Preheat broiler.

In large skillet, heat oil over moderate heat until hot. Add squash and brown for about 5 minutes. Reduce heat to low, cover and cook until soft, about 10 minutes (stirring occasionally).

Transfer squash to ovenproof dish. Drizzle with cream, and season with salt and pepper. Top with cheese, and broil until melted, and golden. Makes 4 servings.
