Quick Spring Salad
Dressing Ingredients:
- 6 TBS olive oil
- 3 TBS red wine vinegar
- 1/4 TSP Dijon mustard
- salt and pepper to taste
Salad Ingredients:
- 1 head romaine lettuce
- 1/2 15 oz can chickpeas
- 2 English cucumbers, halved lengthwise, then sliced
- 1/2 cup Kalamata olives, sliced lengthwise
- 1 avocado, diced
- 3/4 cup feta cheese, cubed or crumbled
- 2 cups fresh croutons
- raw corn, sugar snap peas or other spring vegetables
Prepare dressing by blending oil, vinegar and mustard.
Combine salad ingredients, add dressing and serve.
