Soy-Ginger Tofu


Preheat oven to 375 degrees (or preheat grill according to manufacturer's directions, and spray with Pam). In a large baking dish, combine vinegar, ginger, orange juice, soy sauce, and sesame oil, and 2 TBS water. Stir to combine. Cut drained tofu crosswise into 8 to 12 slices, and arrange in baking dish; turning to coat with marinade. Marinate 15 minutes, turning once. Transfer marinated tofu to disposable baking pan, along with any marinade. Bake until liquid evaporates completely, and tofu is dark brown, about 45 minutes, or grill for 8-10 minutes per side. Let cool 5 minutes before serving. 4 servings.
