Skillet Cornbread

Ingredients:

Preheat over to 350° with 8-9" cast iron skillet in the oven.

Combine dry ingredients and mix thoroughly.

Combine eggs and buttermilk, whisk to uniform consistency.

Combine all just until mixed.

Add oil to heated skillet and pour mixture into the pan. Bake for 30-35 minutes.

For added flavor, sauté 4-6 slices of bacon, crumble when cooled and add to the ingredients. Use the bacon grease in place of the oil.
