Potato Pancakes (ala Jacque Pepin)

Ingredients:

Combine egg, baking powder, flour, salt and pepper. Whisk until smooth

Grate potato on a box grater and squeeze water out. If using, grate onion. Add potato (and onion) to the egg mixture and stir to combine.

Add 1-2 TBS olive oil to a hot skillet, spoon about 1/4 cup of the potato mixture to make several patties. Allow to brown (about 5 minutes) and turn pancakes over to complete cooking (about 5 minutes). Serve immediately with topping of your choice.
