Parsley Tabbouleh


Combine water and bulgur in a small saucepan. Bring to a full boil, remove from heat, cover and let stand until water is absorbed and bulgur is tender, about 30 minutes. Let cool before adding remaining ingredients.

Combine lemon juice, oil, garlic, salt and pepper in small bowl. Add parsley, tomatoes and cucumber to the bulgur and toss. Mix the dressing and add to bulgur and vegetables. Chill for at least 1 hour if serving cold. 4 servings.
