Hot Chicken Salad
Since croutons vary in size and degree of dryness, we vary the amount of mayonnaise and chicken broth we use for this recipe.
Ingredients:
- 2 cups cooked chicken, shredded
- 1 cup finely chopped celery
- 1 cup seasoned croutons
- 1/2 cup toasted slivered almonds
- 1 to 1-1/4 cup mayonnaise
- 2 TB lemon juice
- 1/4 cup chicken broth (if needed to moisten the croutons)
- 1/2 cup grated sharp cheddar cheese
- Salt and pepper to taste
Combine all ingredients, mix well and pour into greased 8 x 8 inch baking dish. Allow to sit refrigerated for up to 30 minutes. Bake 30-35 minutes at 350°, or until golden brown.
