Garbanzo Bean and Tuna Salad with Creamy Lemon Dressing
Ingredients:
- 1/4 cup plain greek yogurt
- 3 TBS mayonnaise
- 1 1/2 TBS Dijon mustard
- 1 tsp grated lemon jest
- 1 6-ounce can of solid white tuna in water, drained
- 2 TBS fresh lemon juice
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup chopped celery or asparagus
- Diced tomato
- 1/2 cup chopped parsley
Whick yogurt, mayonnaise, mustard and lemon jest in a small bowl.
Toss tuna with lemon juice in a large bowl. Add garbanzo beans, celery, tomato and parsley. Add dressing and toss to blend. Season with salt and pepper.
