Fish with Sizzling Olive Butter (Adapted From Melissa Clark, NYT Cooking)

Ingredients:

Heat oven the 350°. Heat a cast iron skillet over mediaum heat.

Add butter and oil, stir in olives and fennel. Cook until fragrant (about 1-2 minutes).

Season fish with salt and pepper. Nestle them in one layer into the skillet. Spoon some of the butter mixture over the fish and transfer the pan to the oven.

Bake until fish reaches an internal temperature of 125°. Transfer to plates and spoon sauce over the fish
