Curry Powder


In small frying pan, on medium-low heat, toast cumin, whole cloves, cardamom, peppercorns, allspice, fenugreek and coriander for 2 minutes, stirring constantly. Remove from heat and cool 5 minutes. Grind with a mortar and pestle until fine. Add remaining ingredients. Alternatively, add all of the ingredients to a spice grinder and process until you have a fine powder. Store in refrigerator.
