Crispy Twice-Roasted Potatoes

Ingredients:

Prehat oven to 375°

Pierce the potatoes. Spread them on rimmed baking sheets (lined with foil) and roast for about 1 hour or until tender.

Halve the potatoes and smash them lightly. Drizzle with olive oil and fine salt. Roast for 45 minutes or until browned and crisp. Flip as they roast. Serve hot with coarse salt.
