Cottage Cheese Wrap
Ingredients:
- 1/2 cup diced yellow pepper
- 1/2 cup carrot, finely chopped
- 1/2 cup chopped and seeded tomato
- 3 TBS fresh dill, chopped
- 1 tsp grated lemon zest
- 1/4 cup chopped red onion, sautéed in 1 tsp olive oil*
- Freshly ground pepper
- 1 cup cottage cheese
- 1/2 cup mixed baby greens
- 2 flour tortillas (10 or 11 inch in diameter)
Combine yellow pepper, carrot, tomato, lemon zest, dill, and sautéed onion (*onion can be left raw, if preferred) in a medium bowl. Add pepper to taste, and gently fold in cottage cheese. Divide the cottage cheese mixture between the tortillas and top with baby greens. Wrap and serve. 2 servings.
