Chicken Orzo Soup
Ingredients:
- 1 small onion, diced
- 2 small carrots, diced
- 2 stacks celery, diced
- 2 Tbs olive oil
- salt and pepper to taste
- 2 1/2 cups low sodium chicken broth
- 1 cup corn
- 2 cups shredded chicken (from rotisserie chicken)
- 1/2 cup Orzo
- 1/2 cup cream
Sauté vegetables in olive oil until tender (about 10 minutes).
Add salt, pepper and chicken broth and simmer 10 minutes.
Add corn, shredded chicken and orzo. Simmer 7-8 minutes or until Orzo is tender.
Add cream and simmer 2-3 minutes.
