Beef Barbeque (For up to 25 lbs of beef)

Sauce Ingredients:

Combine all ingredients; bring mixture to boil in very large pan, reduce to simmer, stirring frequently. Add water or beer as needed.

Meat Preparation:

Up to 25 lbs of sirloin tip, rump or shoulder roast (solid or tied pieces of beef). Grill over charcoal or gas flame at medium heat for 2-1/2 hours, turning every 15 minutes. Keep flare-ups down with water spray on charcoal. May baste meat with beer. After 2-1/2 hours of cooking over open flame, place meat in pan with sauce and continue cooking in sauce for another 2-1/2 hours, turning every 15 minutes, while the sauce and meat juices blend. Again, add water or beer as needed.

Slice beef, dip in sauce and serve on sandwich buns. Cole slaw in the sandwich is a plus, and your favorite baked beans complete the meal.
